Asparagus-Broccoli Casserole

I had a bunch of vegetables to use - asparagus and broccoli - and will be out of town this week for work. I didn't feel like just steaming them and eating them, but I thought they would taste good in a cheesy rice dish.



Stale french bread - perfect topping. It would have been pitched anyway. And got some cheese, onion and garlic.





Fried the onion and garlic in some olive oil, and then added 1 cup of arborio rice and fried that for a minute, then cooked it by adding one cup of water at a time, stirring until it was absorbed, and then adding another, one at a time, using 4 cups of water total. I added some salt and ground white pepper.

Boiled the vegetables until they were bright and left them partially uncooked, and finished the rice, leaving it a bit soupy.

Whizzed up the stale bread for a bread crumb topping.

Mixed the cheese into the rice until it melted, then mixed in half of the vegetables, put it into a baking dish and topped with the other half of the vegetables, a little more cheese, and bread crumbs.



Cooked it for about 20 min at 350, then broiled the top to make the bread crumbs crunchy. Tasted pretty good, and no crazy ingredients!
