French Baguette

This was a great way to use my Kitchen Aid mixer to make something other than cake or frosting. I love this first picture - you mix warm water and yeast and sugar, let it sit in the bowl for five minutes, and the yeast activates and eats the sugar or something, then you're good to get started.

This is probably the least fussy bread I've ever baked - not that I've baked that many. But you're not dealing with days of yeast fermenting, crazy rising schedules, or capturing wild local yeasts from the air. All things I am crazy enough to want to do, mind you, just haven't yet because of the rigorous time commitment.

I am so anti Wonder Bread, and this bread was easy enough to make in a few hours and didn't require much actual work. Plenty of time to play Super Mario Brothers while it's doing its thing.

We didn't eat it all the first day, so I wrapped it in plastic wrap and stuck it in the fridge, and I was able to have toast for breakfast all week from it. It toasted up pretty nicely. And no crazy ingredients or preservatives!

It would for sure make good sandwich bread, too.

Now if I would just take the time to capture some local yeasts from my backyard for a good sourdough...
