Zesty Pizza Sauce
Ingredients:
5-6 tomatoes
Small handful of basil
2 cloves of garlic
1 shallot
1 tsp sea salt
1/2 tsp white pepper
Pinch hot pepper seeds
1 tsp oregano
Remove the skins of the tomato (core each and cut a small x on its opposite side, drop into boiling water for 30 seconds, and then plunge into ice water. Skins will peel off easily). Quarter the skinned tomatoes and remove the seeds and hard parts.
Combine the good tomato pieces, shallot, garlic and basil in a food processor or blender, or mash them with a potato masher in a pan.
Bring the sauce to a boil and season with the salt, pepper, oregano and hot pepper seeds. Reduce to simmer for an hour or until it has thickened.
Makes enough for a 12-inch pizza crust.
